The Market Restaurant’s
House-Made Lasagna with Eggplant, Tomato, Pesto and Parmesan
This is the wonderfully tender and flavorful lasagna that has been on the menu for the last couple of days up at The Market Restaurant in Annisquam. It’s ridiculously delicious! Co- chefs Nico Monday and Amelia O’Reilly and their talented crew are cooking up a storm with all the farm fresh ingredients that are at their summer-time peak right now. If you haven’t been up there yet this summer, you really should go! You may see me in the kitchen because Amelia and Nico have been kind enough to let me help out a couple of times a week – I am having tons of fun and learning a lot. This week I promised that I would try not to throw the very nice pairing knifes into the compost again – oopps. I am sure that they are loving having me around.
